These Skillet Chicken Parmesan Meatballs are a delicious Italian-inspired dish that is quick and easy to make, perfect for a satisfying weeknight dinner. Ingredients

For the meatballs:

  • 1 lb ground chicken
  • 1 large egg
  • 3 cloves garlic, grated
  • ¼ cup grated parmesan cheese
  • ¼ cup fresh parsley, chopped
  • ¼ cup Italian breadcrumbs
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper

For cooking:

  • 2 tablespoon olive oil
  • 1 jar marinara sauce
  • 1 ½ cups shredded mozzarella
  • 2 tablespoon parsley to serve

Instructions

  1. Preheat the oven to 350℉.
  2. Mix together the ground chicken, egg, grated garlic, parmesan cheese, parsley, breadcrumbs, salt, and pepper until just combined.
  3. Form the mixture into 8-10 large meatballs.
  4. In a large oven-safe skillet, heat olive oil on medium heat. Sear the meatballs on all sides for 2-3 minutes per side.
  5. Add marinara sauce to the skillet with the meatballs.
  6. Sprinkle shredded mozzarella over the sauce and meatballs.
  7. Bake in the oven at 350℉ for about 10 minutes until the cheese melts and chicken is cooked through.
  8. Top with fresh parsley before serving.
