Ingredients

For the Chicken:

  • 4 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 1/2 cups Italian-style breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper, to taste
  • Olive oil, for frying

For Assembly:

  • 1 cup marinara sauce
  • 1 1/2 cups shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese (for topping)
  • 1/4 cup chopped fresh basil or parsley (optional)
  • Pasta of choice, for serving (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C).
  2. Prepare the Chicken: Season the chicken breasts with salt and pepper. Dredge each piece in flour, dip in beaten eggs, and coat with breadcrumbs mixed with 1/2 cup Parmesan cheese.
  3. Fry the Chicken: Heat olive oil in a large skillet over medium-high heat. Fry chicken until golden brown on both sides. Drain on a paper towel-lined plate.
