Sicilian Meatloaf is a flavorful Italian classic combining ground beef, pork, and veal with sautéed vegetables, fresh herbs, and Parmesan cheese. Baked to perfection and topped with a rich tomato sauce, this hearty meatloaf makes a comforting meal perfect for family dinners.

Ingredients

For the Meatloaf:

  • 1 lb ground beef
  • 1 lb ground pork
  • ½ lb ground veal
  • 1 cup breadcrumbs
  • 1 cup grated Parmesan cheese
  • 1 onion, finely chopped
  • 1 bell pepper, finely chopped
  • 2 celery stalks, finely chopped
  • 3 cloves garlic, minced
  • 2 eggs
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh basil, chopped
  • Salt and pepper, to taste

For the Sauce:

  • 1 cup tomato sauce
  • 1 tablespoon olive oil
  • Salt and pepper, to taste

Instructions

  1. Preheat the Oven: Preheat your oven to 375°F (190°C) to prepare for baking the meatloaf.
  2. Sauté the Vegetables: Heat olive oil in a skillet over medium heat. Add finely chopped onion, bell pepper, and celery, sautéing until softened, about 5 to 7 minutes. Stir in minced garlic and cook for an additional minute to release its aroma.
  3. Mix the Meatloaf: In a large bowl, combine ground beef, ground pork, and ground veal. Incorporate the sautéed vegetables, breadcrumbs, grated Parmesan cheese, eggs, chopped fresh parsley and basil, and season with salt and pepper. Mix gently until all ingredients are evenly combined without overworking the mixture.
  4. Shape and Bake: Transfer the meat mixture to a baking sheet lined with parchment paper or grease a loaf pan. Form the mixture into a loaf shape. Spread half of the tomato sauce evenly over the top. Place in the preheated oven and bake for 1 hour, or until the internal temperature reaches 160°F (71°C), indicating it is fully cooked.
  5. Rest and Serve: Remove the meatloaf from the oven and let it rest for 10 to 15 minutes to allow juices to redistribute. Slice and serve warm with the remaining tomato sauce on the side for added flavor.

Notes

  • Use a meat thermometer to check doneness for perfect results every time.
  • You can substitute the veal with additional ground pork or beef if preferred.
  • Allowing the meatloaf to rest before slicing ensures it stays juicy and tender.
  • For a spicier version, add crushed red pepper flakes to the tomato sauce or meat mixture.
  • Serve with a side of roasted vegetables or a fresh green salad for a complete meal.
