This Coney Chili Mac Casserole is a delicious combination of beefy chili, macaroni, and cheddar cheese baked to perfection. Inspired by the flavors of Coney Island chili dogs and classic mac and cheese, this dish is a comforting and crowd-pleasing meal that’s great for gatherings or busy weeknights.

Ingredients

Ground Beef Mixture:

  • 1 lb ground beef or substitute hot dogs, sliced
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 2 tbsp tomato paste
  • 1 packet or 2 tbsp chili seasoning

Pasta:

  • 8 oz elbow macaroni or other small pasta

Cheese and Seasoning:

  • 1½ cups shredded cheddar cheese or cheese blend
  • Salt and pepper to taste
  • Optional: canned beans, jalapeños, scallions, mustard for topping
  • Optional: ¼ tsp smoked paprika or chipotle powder

Instructions

  1. Cook Pasta: Boil salted water and cook macaroni until al dente. Drain.
  2. Brown Meat: Cook ground beef, onion, garlic until browned. Add tomato paste and chili seasoning.
  3. Add Flavor: Stir in garlic, tomato paste, and chili seasoning. Cook for 1–2 minutes.
  4. Combine: Mix cooked pasta with meat mixture.
  5. Assemble: Layer mixture and cheese in a casserole dish.
  6. Bake: Bake at 375°F (190°C) for 20–25 minutes.
  7. Serve: Rest for 5 minutes before serving. Top with optional garnishes.
