Cheesy Cabbage Beef Casserole is a comforting and budget-friendly dish that combines tender cabbage, savory ground beef, fluffy rice, and melty cheddar cheese. Perfect for cold nights or busy weeknights, this casserole celebrates classic flavors and simple ingredients without any fancy equipment needed.

Ingredients

For the Casserole:

  • 1 medium head of cabbage, chopped
  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 cup cooked rice (white or brown rice)
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • 2 cups shredded cheddar cheese
  • 1 cup beef broth

Instructions

  1. Preheat the Oven: Set oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. Cook the Beef and Aromatics: Brown ground beef, onion, and garlic in a skillet.
  3. Add the Cabbage: Cook chopped cabbage with beef mixture until wilted.
  4. Mix in Tomatoes, Rice, and Seasoning: Combine tomatoes, rice, Italian seasoning, salt, and pepper.
  5. Assemble the Casserole: Transfer mixture to baking dish, pour beef broth, and top with cheese.
  6. Bake: Cover with foil and bake for 30 minutes, then bake uncovered until cheese is golden.

Notes

  • Cabbage cooks down quickly, so don’t worry if it seems overstuffed in the skillet initially.
  • Use pre-cooked rice for best results; if using uncooked rice, cook it before adding to the casserole.
  • If desired, add extra beef broth for a saucier casserole.
  • The casserole can be assembled a day ahead and refrigerated until ready to bake.
