Ingredients

1 bunch of broccoli

200 grams white mushrooms, sliced

1 medium carrot, julienned

2 green onions, chopped

1 tablespoon cooking oil

1/2 teaspoon salt (or to taste)

1/2 teaspoon sugar

1/2 tablespoon starch (cornstarch or potato starch)

1 tablespoon soy sauce

1/4 cup water

Instructions

  • Blanch the broccoli in boiling water for about 2 minutes until just tender, then drain and set aside.

  • Heat cooking oil in a pan or wok over medium heat. Add sliced mushrooms and sauté until softened (about 5 minutes).

  • Add julienned carrots and chopped green onions, and sauté for another 2-3 minutes.

  • In a small bowl, mix starch with water to create a slurry. Add to the pan along with soy sauce, salt, and sugar. Stir to coat the vegetables.

  • Add the blanched broccoli to the pan and mix everything together. Cook for another 2 minutes. Serve hot.
