Ingredients

For the Sausage and Veggies:

  • 1 large green bell pepper, sliced into strips
  • 1 medium yellow bell pepper, sliced (optional)
  • 1 large yellow onion, sliced
  • 1 cup cherry tomatoes, halved (or 1 medium tomato, diced)
  • 2 tablespoons olive oil or butter
  • 1 teaspoon garlic powder
  • 1 teaspoon black pepper
  • ½ teaspoon salt, or to taste
  • 1 teaspoon Cajun seasoning (optional)

For Serving:

  • 2 cups cooked white rice (or brown rice, cauliflower rice)

Instructions

  1. Heat the Pan: Start by heating a large skillet over medium heat. Add olive oil or butter.
  2. Brown the Turkey Sausage: Cook the sausage slices for 4–5 minutes per side until browned. Set aside.
  3. Sauté the Veggies: Sauté onions, bell peppers, and tomatoes for 5–6 minutes. Add cherry tomatoes and cook for 2–3 minutes.
  4. Season and Combine: Return sausage to the skillet, add seasonings, and cook for 2–3 minutes.
