Ingredients

Sweet Potatoes and Seasonings

  • 3 large sweet potatoes
  • 3 tablespoons olive oil
  • ½ teaspoon cinnamon
  • ½ teaspoon smoked paprika
  • ½ teaspoon ground cumin
  • ½ teaspoon ground coriander
  • ½ teaspoon red pepper flakes
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper

Toppings

  • 1 tablespoon regular or hot honey (spicy is delicious!)
  • ⅓ cup crumbled feta cheese
  • Fresh chives or parsley, chopped
  • Additional honey, for serving

Instructions

  1. Preheat Oven: Preheat your oven to 425°F to prepare for roasting the sweet potato rounds.
  2. Prepare Sweet Potatoes: Wash the sweet potatoes thoroughly and pat them dry. Slice into ⅓-inch thick rounds to ensure even cooking.
  3. Coat with Oil: Drizzle olive oil on a large rimmed baking sheet. Place the sweet potato rounds on the sheet, ensuring they do not touch to allow proper roasting. Turn the slices to coat them evenly with the oil.
  4. Season and Add Honey: Sprinkle cinnamon, smoked paprika, ground cumin, ground coriander, red pepper flakes, kosher salt, and black pepper over the sweet potatoes. Drizzle the honey on top and toss again to evenly distribute the spices and honey.
  5. Roast Sweet Potatoes: Bake for 20 minutes, then flip the rounds carefully. Continue baking for an additional 20-25 minutes until the edges are golden brown and the rounds are crispy.
  6. Transfer and Season: Remove the roasted sweet potatoes from the oven and carefully transfer them to a serving platter. Lightly season with a bit more salt as desired.
  7. Add Toppings: Drizzle additional honey over the sweet potato rounds, then sprinkle crumbled feta cheese and chopped fresh chives or parsley on top.
  8. Serve Warm: Serve the roasted sweet potato rounds warm for the best flavor and texture experience.
