This Roasted Sweet Potato recipe offers a simple and flavorful way to enjoy sweet potatoes with a crispy, golden exterior and tender interior. Tossed with olive oil, Parmesan cheese, Italian seasoning, and garlic powder, these roasted sweet potato cubes are perfect as a side dish for any meal, providing a delicious combination of savory and slightly sweet flavors.

Ingredients

Sweet Potatoes

  • 3 large sweet potatoes, peeled and diced into small cubes

Seasoning & Coating

  • 3 tablespoons olive oil
  • 4 tablespoons grated Parmesan cheese
  • 2 teaspoons Italian seasoning
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste

Garnish (Optional)

  • Parsley for garnish
  • Extra Parmesan cheese for sprinkling

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C). Lightly coat a large baking pan with non-stick cooking spray or line it with parchment paper to prevent sticking. Set the pan aside.
  2. Prepare the Potatoes: In a medium bowl, combine the olive oil, grated Parmesan cheese, Italian seasoning, garlic powder, salt, and pepper. Add the diced sweet potatoes to the bowl and toss them thoroughly to coat every piece evenly with the seasoning mixture.
  3. Roast the Sweet Potatoes: Spread the coated sweet potato cubes in an even layer on the prepared baking pan. Place in the oven and bake for 32 to 35 minutes, or until they are lightly browned, crispy on the edges, and tender inside. Halfway through cooking, you may gently stir or flip them for even roasting.
  4. Finish and Serve: Remove the pan from the oven and let the sweet potatoes cool for about 5 minutes. Before serving, sprinkle with additional Parmesan cheese and fresh parsley if desired for extra flavor and presentation. Serve warm.

Notes

  • You can use sweet potatoes of different sizes, adjusting the dicing size for even cooking.
  • For a dairy-free version, omit the Parmesan cheese or replace it with a vegan cheese alternative.
  • Ensure the potatoes are spread out evenly on the pan to achieve crispiness; overcrowding may cause steaming rather than roasting.
  • Leftover roasted sweet potatoes can be refrigerated for up to 3 days and reheated in the oven or air fryer for best texture.
  • Feel free to add other herbs or spices such as smoked paprika or rosemary for variety.
