Ingredients

Bread

  • 1 large French baguette, sliced into ½-inch thick rounds

Roasted Red Peppers

  • 2 large red bell peppers

Goat Cheese Mixture

  • 6 oz. soft goat cheese
  • 2 large garlic cloves, minced
  • ½ tsp salt, to taste
  • ½ tsp black pepper powder

Other Ingredients

  • 2 tbsp olive oil
  • Fresh basil leaves, for garnish

Instructions

  1. Roast the Peppers: Preheat your oven’s broiler and place the red bell peppers on a baking sheet. Broil the peppers, turning occasionally, until their skins are charred and blistered, about 10-15 minutes.
  2. Steam and Peel: Remove the peppers from the oven and transfer them to a bowl. Cover immediately with plastic wrap to steam for about 10 minutes. Once cooled, peel off the skins, then remove the stems and seeds. Slice the peppers into thin strips.
  3. Toast the Baguette: Preheat the oven to 375°F (190°C). Arrange the baguette slices on a baking sheet and brush each slice with olive oil. Bake for 8-10 minutes, or until lightly toasted and golden.
  4. Prepare the Goat Cheese Mixture: In a small bowl, combine the soft goat cheese with the minced garlic, salt, and black pepper. Mix until smooth and well integrated.
  5. Assemble the Crostini: Spread a generous layer of the goat cheese mixture on each toasted baguette slice, then top with several strips of roasted red pepper.
  6. Garnish and Serve: Finish with fresh basil leaves on top of each crostini and serve immediately for best flavor and texture.
