Ingredients

Vegetables

  • 300 g green beans
  • 300 g carrots

Seasoning and Dressing

  • ½ tsp pepper
  • 2 tbsp honey
  • 2 tbsp oil

Instructions

  1. Trim: Wash the green beans and trim off the stalk ends to prepare them for roasting.
  2. Cut: Peel the carrots and slice them into long batons that match the approximate length and width of the green beans for even cooking.
  3. Arrange: Line a roasting dish with baking parchment and lay the carrot batons in a single layer to ensure they roast evenly.
  4. Coat: Drizzle the oil, salt, and pepper over the carrots and toss them to make sure each piece is well coated with the seasoning.
  5. Roast Carrots: Preheat the oven to 200°C (400°F, 180°C fan, Gas Mark 6) and roast the carrots for 15 minutes until they start becoming tender.
  6. Add Beans and Honey: Remove the roasting dish from the oven and add the green beans along with the honey. Stir everything gently to coat the vegetables evenly with the honey and seasoning.
  7. Roast Together: Return the dish to the oven and roast for another 15 minutes or until both the carrots and green beans are tender and caramelized.
  8. Serve: Transfer the roasted green beans and carrots to a serving dish and serve warm as a flavorful side dish.
