These Roasted Cabbage Steaks with Parmesan are a flavorful and simple side dish perfect for any meal. Tender cabbage wedges are generously brushed with a garlic-infused melted butter and Parmesan cheese mixture, then roasted until the edges are beautifully charred and crispy. This easy recipe elevates humble cabbage into a savory, cheesy delight, garnished with fresh parsley for a burst of color and freshness.

Ingredients

Vegetables

  • 1 head green cabbage (medium size, cut into 8 wedges)

Butter Mixture

  • 8 Tbsp unsalted butter (melted)
  • Salt and freshly ground black pepper (to taste)
  • 6 cloves garlic (minced)

Toppings

  • 1 cup Parmesan cheese (freshly grated)
  • Chopped fresh parsley (optional, for garnish)

Instructions

  1. Preheat Oven: Preheat your oven to 375 degrees Fahrenheit and spray a 9×13-inch baking dish with cooking spray to prevent sticking. Set aside.
  2. Prepare Butter Mixture: Melt the unsalted butter in a small saucepan or microwave. Stir in minced garlic, salt, and freshly ground black pepper until well combined to create a flavorful garlic butter.
  3. Arrange Cabbage Wedges: Place the cabbage wedges flat side down in the prepared baking dish in a single layer to ensure even cooking.
  4. Butter the First Side: Brush half of the garlic butter mixture generously over the top side of the cabbage wedges.
  5. Add Parmesan Cheese: Sprinkle half of the freshly grated Parmesan cheese evenly over the buttered side of the cabbage.
  6. Flip and Repeat: Carefully flip each cabbage wedge over using a spatula, pressing the Parmesan cheese into the wedge so it adheres well. Brush the remaining garlic butter on the unseasoned side and sprinkle the remaining Parmesan cheese over it, pressing gently with your fingers to help it stick.
  7. Roast the Cabbage: Place the baking dish in the preheated oven and roast for 40 to 45 minutes, or until the cheese is melted, and the edges of the cabbage are charred and lightly browned for a delicious crispy texture.
  8. Manage Browning: If you notice the cabbage edges browning too quickly or burning, cover those spots with foil to prevent over-charring while the rest cooks through.
  9. Garnish and Serve: Remove the cabbage steaks from the oven and sprinkle with chopped fresh parsley for a pop of color and freshness, then serve immediately as a side dish.

Notes

  • Use freshly grated Parmesan for the best melting and flavor.
  • Adjust the amount of garlic and seasoning to taste.
  • If the wedges are large, cook an additional 5-10 minutes to ensure tenderness.
  • Cover with foil if the cabbage starts to brown too fast to avoid burning.
  • For a vegan version, substitute butter with plant-based butter and Parmesan with a vegan cheese alternative.
