This creamy lemon risotto is a zesty and refreshing twist on traditional risotto, perfect for spring and summer dinners when you want something light yet indulgent.

Ingredients

Risotto al Limone:

  • 1 cup Arborio rice
  • 1 lemon, zested and juiced
  • 1/4 cup Parmesan cheese, grated
  • 1 tbsp butter
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • Fresh parsley, for garnish

Instructions

  1. In a large skillet, heat butter over medium heat. Add the onion and garlic, cooking until soft. Stir in the Arborio rice and cook for 2 minutes to toast the grains.
  2. Gradually add the vegetable broth, one ladle at a time, stirring constantly until the liquid is absorbed before adding more. Continue for about 20 minutes until the rice is tender.
  3. Stir in the lemon zest, juice, and Parmesan cheese. Mix well until creamy.
  4. Season with salt and pepper to taste.
  5. Garnish with fresh parsley and serve hot.
