Ingredients

Base Ingredients

  • 1 large avocado (or 2 small), skin and seed removed
  • 1 ripe banana, peeled
  • 34 tablespoons cacao powder
  • 34 tablespoons pure maple syrup, coconut nectar or date syrup
  • 1 teaspoon vanilla extract

Optional Flavorings

  • 1/4 teaspoon cinnamon (optional)
  • 1/2 cup fresh squeezed orange juice, plus more as needed
  • 1 teaspoon orange zest (optional)
  • 1 teaspoon instant espresso powder

Instructions

  1. Blend the Base Pudding: In a blender, combine the avocado, banana, cacao powder, your choice of sweetener (maple syrup, coconut nectar, or date syrup), and vanilla extract. Add any one of the optional flavorings such as cinnamon, orange juice and zest, or instant espresso powder. Blend the mixture until creamy, stopping occasionally to scrape down the sides for an even consistency.
  2. Adjust Consistency: Add water a few tablespoons at a time (typically about 1/2 cup, except for the orange-flavored version which uses orange juice) to achieve your desired pudding thickness. Taste and adjust sweetness or flavorings accordingly.
  3. Chill the Pudding: Although the pudding can be served immediately at room temperature, it is best chilled in the refrigerator for a couple of hours to develop flavor and improve texture.
  4. Serve: Spoon the pudding into serving dishes and top with a dollop of whipped coconut cream, shaved dark chocolate, cacao nibs, or carob chips for added texture and flavor.
  5. Store Leftovers: Store any leftover pudding in an airtight container in the refrigerator for up to 4-5 days. For longer storage, freeze the pudding in popsicle molds for up to 2 months.
