A refreshing and creamy Raspberry Lassi, perfect for a quick breakfast, snack, or light dessert. This vibrant drink combines the tartness of raspberries with the smoothness of yogurt, creating a delightful and healthy treat. It’s easily customizable with your choice of sweetener and milk, and can be made with fresh or frozen raspberries.

Ingredients

Raspberry Lassi:

  • 1 1/2 cups raspberries (fresh or frozen)
  • 1 cup plain non-fat yogurt
  • 1/2 cup whole milk (or coconut milk)
  • 1 tablespoon white sugar or honey (more or less to taste)
  • Dash of cinnamon (optional)
  • Ice (optional)

Instructions

  1. Step 1: Gather all ingredients. Make sure raspberries are washed if using fresh ones. If using frozen raspberries, there’s no need to thaw them.
  2. Step 2: Place the raspberries, yogurt, milk, sugar (or honey), and cinnamon (if using) into a blender.
  3. Step 3: Blend the mixture for 1-2 minutes until it becomes smooth and frothy. If the lassi is too thick, add a little more milk until you reach your desired consistency.
  4. Step 4: If you prefer a thicker, milkshake-like consistency, add a few ice cubes and blend until smooth.
  5. Step 5: Pour the Raspberry Lassi into glasses and serve immediately. Garnish with a few fresh raspberries or a sprinkle of cinnamon, if desired.

Notes

  • For a vegan version, use non-dairy yogurt and coconut milk.
  • Adjust the amount of sweetener based on the sweetness of your raspberries and your personal preference.
  • If you don’t have fresh raspberries, frozen raspberries work just as well and can even give the lassi a colder, thicker consistency.
  • Add a touch of cardamom or ginger for a more complex flavor.
  • Garnish with fresh mint leaves for a pop of color and freshness.
