Raspberry Delight is a quick and refreshing no-bake dessert featuring a crunchy graham cracker crust topped with luscious whipped cream mixed with fresh raspberries, finished with a vibrant raspberry topping and extra cracker crumbs for crunch. Ingredients

Crust

  • 6 graham crackers

Whipped Cream Mixture

  • 1 cup heavy whipping cream
  • ½ teaspoon vanilla extract
  • 2 tablespoons granulated sugar

Fruit Topping

  • 5 cups fresh raspberries

Instructions

  1. Crush Graham Crackers: Place the 6 graham crackers into a zip-top bag and crush them using a rolling pin or the bottom of a pan until they become fine crumbs.
  2. Prepare Crust Base: Spread the crushed graham crackers evenly on the bottom of an ungreased 8 x 8 square pan. Reserve 2 tablespoons of these crumbs to use as a topping later.
  3. Whip Cream: Pour the heavy whipping cream into a mixing bowl and whip using an electric mixer until soft peaks form. Then gently mix in the granulated sugar and vanilla extract to sweeten and flavor the cream.
  4. Fold in Raspberries: Carefully fold 4 cups of fresh raspberries into the whipped cream to combine without crushing the berries, ensuring even distribution.
  5. Assemble Layers: Spread the whipped cream and raspberry mixture evenly over the graham cracker crust in the pan.
  6. Add Topping: Arrange the remaining 1 cup of fresh raspberries on top of the whipped cream layer, then sprinkle the reserved 2 tablespoons of graham cracker crumbs evenly over the berries to finish.
  7. Chill: Cover the assembled dessert and refrigerate for at least 2 hours to allow it to set and for flavors to meld before serving.
