A quick and flavorful potsticker stir fry combining crispy pan-cooked potstickers with a vibrant mix of fresh vegetables, nuts, and a sweet-hot sauce for a delightful Asian-inspired meal perfect for weeknight dinners or gatherings.

Ingredients

Vegetables

  • 2 Large Onions – thinly sliced
  • 1 tsp Grated Ginger (or powder)
  • 1 tsp Grated Garlic (or powder)
  • 4 Medium Red Bell Peppers – thinly sliced
  • 2 Small Green Bell Peppers – thinly sliced
  • 2 Large Carrots – thinly sliced
  • 3 Cups Sliced Cabbage
  • 2 Cups Sliced Mushrooms
  • 4 Stalks Green Onions – thinly sliced

Protein & Nut

  • 30 Frozen Potstickers (large bag)
  • 4 Tbsp Cashews

Sauces & Oils

  • 1 Packet Sweet-Hot Sauce (from potsticker packet)
  • 3 tsp Hot Chili Sauce (adjust to taste)
  • 4 Tbsp Sesame Oil (or any light oil)
  • 3 tsp Sesame Seed

Instructions

  1. Heat Oil: Add 4 tablespoons of oil in a large pan and warm over medium heat.
  2. Arrange Potstickers: Place the frozen potstickers side by side in the pan, leaving some space between them for even cooking.
  3. Cook Potstickers: Heat the potstickers for 2 minutes, then add water to the pan and cover it to steam-cook the potstickers thoroughly, which takes about 8-10 minutes.
  4. Sauté Potstickers: Once the potstickers are soft, add 2 teaspoons of the sweet-hot dipping sauce and sauté them for 2 more minutes until lightly glazed.
  5. Remove Potstickers: Turn off the heat and transfer the sautéed potstickers onto a tray; they can be served as an appetizer at this stage if desired.
  6. Heat Sesame Oil: In the same pan, heat the sesame oil over medium-high flame.
  7. Sauté Aromatics: Add sliced onions, grated ginger, and garlic; stir fry for 1 minute until fragrant.
  8. Add Vegetables and Nuts: Add bell peppers, carrots, cabbage, mushrooms, cashews, and sesame seeds, stir frying for another minute on high heat to retain crispness and crunch.
  9. Combine Potstickers and Sauce: Return the cooked potstickers to the pan, add the remaining sweet-hot sauce and hot chili sauce, and sauté everything together for 1 minute to blend flavors well.
  10. Serve: Turn off heat, transfer the stir fry to a serving bowl, sprinkle with freshly chopped scallions and additional sesame seeds, and serve hot.

Notes

  • You can adjust the amount of hot chili sauce to control the spiciness.
  • If you prefer a different protein, chicken or tofu can be added along with vegetables.
  • Using frozen potstickers directly without thawing saves time and maintains texture.
  • For a gluten-free version, ensure potstickers and sauces are gluten-free certified.
  • Use a large non-stick skillet or wok for best stir-fry results.
