Ingredients

Chicken Fajita Skillet:

  • 3 boneless, skinless chicken breasts, diced
  • 2 tablespoons olive oil
  • ½ yellow onion, diced
  • 1 red bell pepper, sliced into strips
  • 1 green bell pepper, sliced into strips
  • 1 orange bell pepper, sliced into strips
  • 1 packet fajita seasoning
  • 2 cups Minute rice
  • 2 cups chicken broth
  • 8 ounces tomato sauce

Topping:

  • Gordos cheese dip, to taste

Instructions

  1. Sauté Vegetables: Heat olive oil in a large skillet over medium-high heat. Sauté diced onion and bell pepper strips for 2–3 minutes.
  2. Cook Chicken: Add diced chicken to the skillet, sprinkle fajita seasoning, and cook for 7–8 minutes until chicken reaches 165°F (74°C).
  3. Add Rice and Broth: Stir in Minute rice, tomato sauce, and chicken broth. Simmer for 2 minutes.
  4. Let Sit: Remove from heat and let the skillet sit to allow the rice to absorb the broth.
  5. Add Cheese Dip: Top with Gordos cheese dip, serve hot, and enjoy!
