Ingredients

  • ½ cup peanut butter
  • ½ cup pumpkin puree

Instructions

  1. Combine ingredients: In a large bowl or food processor, mix the oat flour, oats, chia or flax seeds, sea salt, pumpkin pie spice, honey, peanut butter, pumpkin puree, and vanilla extract until fully combined.
  2. Blend until smooth: If using a food processor, process the mixture until smooth and evenly blended. This ensures the flavors meld well and the texture is consistent. If mixing by hand, stir thoroughly until uniform.
  3. Add chocolate chips: Fold in the mini chocolate chips after blending. You can mix them into the bowl or, if you processed the mixture, sprinkle them on top and gently fold in, minimizing extra cleanup.
  4. Chill the mixture: Cover the mixture and refrigerate for 15 to 20 minutes to firm up the batter. This step helps the mixture hold together better when rolling and improves texture.
  5. Roll into balls: Once chilled, scoop small portions and roll them into bite-sized balls using your hands. Place the balls on a plate or tray and enjoy immediately or store for later.
