Ingredients

Dry Ingredients

  • 2 cups Biscuit/Baking Mix
  • 2 tsp Italian Seasoning

Wet Ingredients

  • 2 Eggs
  • 1 cup 2% Milk

Pizza Add-ins

  • 1/2 cup Part-Skim Mozzarella Cheese, shredded
  • 1/2 cup Pepperoni, chopped
  • 1/4 cup Cherry Tomatoes, chopped and seeded
  • 1/4 cup Green Peppers, chopped

For Serving

  • 1 cup Pizza Sauce, warmed

Instructions

  1. Mix Dry Ingredients: In a large bowl, combine the biscuit mix and Italian seasoning thoroughly to evenly distribute the flavor.
  2. Combine Wet Ingredients: In a separate bowl, whisk together the eggs and 2% milk until the mixture is smooth and well blended.
  3. Form the Batter: Add the wet mixture to the dry ingredients and stir gently until just moistened; avoid overmixing to keep pancakes tender.
  4. Add Pizza Toppings: Fold in the shredded mozzarella, chopped pepperoni, cherry tomatoes, and green peppers, ensuring they are evenly incorporated without crushing the veggies.
  5. Preheat and Grease Griddle: Heat a griddle or large non-stick skillet over medium heat and lightly grease it with cooking spray or butter to prevent sticking.
  6. Cook Pancakes: Pour batter onto the griddle in 1/4 cup portions. Cook until bubbles form and begin to pop on the surface and the bottom turns golden brown, about 2-3 minutes.
  7. Flip and Finish Cooking: Carefully turn each pancake and cook the second side until it is golden brown and the pancakes are cooked through, about 2 more minutes.
  8. Serve with Pizza Sauce: Serve the pancakes hot with warmed pizza sauce on the side for dipping, enhancing the pizza flavor experience.

Notes

  • You can substitute pepperoni with cooked Italian sausage or omit for a vegetarian version.
  • For a spicier kick, add a pinch of red pepper flakes to the batter.
  • Use a non-stick skillet or griddle to prevent the pancakes from sticking and breaking apart.
  • Leftover pancakes reheat well in a toaster oven or microwave.
  • If you prefer gluten-free, use a gluten-free baking mix.
