Ingredients

Pizza Dough

  • 3/4 lb pizza dough (store-bought or homemade)

Filling & Toppings

  • 1/3 cup pizza sauce
  • 3/4 cup shredded cheese (mozzarella, cheddar, or your favorite blend)
  • 1/3 cup mini pepperoni (or regular pepperoni chopped)
  • 1/8 tsp dried basil (optional)
  • 1/8 tsp red pepper flakes (optional)

Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 450°F (232°C). Lightly brush a 12-cavity cupcake tin with olive oil or use cooking spray to prevent sticking.
  2. Roll Out Dough: On a lightly floured surface, roll out the pizza dough to about 1/4-inch thickness. Use a circle cookie cutter or a drinking glass to cut out twelve 3-inch diameter dough circles. Collect and re-roll any scraps as needed.
  3. Line the Cupcake Tin: Gently press each dough circle into the bottom and up the sides of each cavity in the cupcake tin, forming little dough cups.
  4. Fill the Cups: Spoon approximately 1 1/2 teaspoons of pizza sauce into the bottom of each dough cup. Sprinkle about 1 tablespoon of shredded cheese on top of the sauce, then add 4 to 5 mini pepperoni slices. Optionally, sprinkle dried basil and red pepper flakes over each for added flavor.
  5. Bake the Pizza Cupcakes: Place the tin in the preheated oven and bake for 10-12 minutes, or until the cheese is bubbly and the edges of the dough are golden brown and cooked through.
  6. Cool and Serve: Remove the tin from the oven and allow the pizza cupcakes to cool for a couple of minutes before carefully removing them and serving warm.

Notes

  • For best results, use fresh pizza dough or properly thawed store-bought dough.
  • Feel free to customize the toppings with vegetables, different meats, or extra cheese.
  • If you prefer a spicier cupcake, increase the red pepper flakes to taste.
  • Let the cupcakes cool slightly to avoid burning from the hot cheese and sauce.
  • These can be made ahead and reheated in the oven for a few minutes before serving.
