Ingredients

Cookie Dough

  • 1 cup unsalted butter (softened)
  • 1 cup granulated sugar
  • 2 large eggs
  • ½ teaspoon almond extract
  • 1 teaspoon baking soda
  • 1 teaspoon cream of tartar
  • ¾ teaspoon salt
  • 2 ¾ cups all-purpose flour

Frosting

  • ½ cup unsalted butter (softened)
  • 4 cups powdered sugar
  • ½ teaspoon almond extract
  • ½ teaspoon salt
  • 34 tablespoons milk
  • Pink food coloring

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Line cookie sheets with parchment paper or silicone baking mats to prevent sticking.
  2. Cream Butter and Sugar: In a large bowl, use a hand mixer or stand mixer with the paddle attachment to cream together softened butter and granulated sugar until light and fluffy, about 2-3 minutes.
  3. Add Wet Ingredients and Leavening: Mix in eggs one at a time, then add almond extract, baking soda, cream of tartar, and salt. Blend well to combine.
  4. Add Flour: Gradually add the all-purpose flour to the wet mixture, mixing slowly until a soft cookie dough forms.
  5. Shape Cookies: Scoop 2-tablespoon sized portions of dough onto the prepared cookie sheets, spacing them about 2 inches apart. To flatten evenly, press each dough ball with the bottom of a drinking glass sprayed lightly with nonstick spray to prevent sticking.
  6. Bake: Bake the cookies for 10-13 minutes or until the tops lose their glossy sheen but are not browned. Remove from oven and allow cookies to cool completely on a wire rack before frosting.
  7. Prepare Frosting: Mix softened butter and powdered sugar together until crumbly, then add almond extract, salt, and 2 tablespoons of milk. Mix until smooth and creamy, adding additional milk as needed to reach a spreadable consistency.
  8. Color Frosting: Add a few drops of pink food coloring to the frosting and mix until the color is evenly distributed.
  9. Frost Cookies: Spread or pipe the pink frosting onto cooled cookies as desired. Store the frosted cookies loosely covered to maintain freshness.

Notes

  • Use room temperature ingredients for even mixing.
  • Do not overbake to keep cookies soft and tender.
  • Adjust pink food coloring quantity to achieve your preferred shade of pink.
  • Cookies can also be stored in an airtight container for up to 5 days.
  • To avoid sticking when pressing cookies, lightly spray the bottom of your glass or press tool.
