These Pink Sugar Cookies are soft, buttery, and delightfully pink, perfect for any occasion that calls for a sweet treat with a pop of color. Made with simple ingredients including cold butter, sugar, eggs, vanilla, and a touch of red food coloring, these cookies deliver classic flavor with a charming twist. They bake quickly to a light golden texture with a tender crumb and subtly crisp edges.

Ingredients

Dry Ingredients

  • 2 ½ cups flour (gluten free 1 to 1 or all purpose)
  • 1 tsp baking powder
  • Pinch sea salt (optional)

Wet Ingredients

  • 1 cup cold butter
  • 1 cup granulated sugar
  • 1 egg
  • 1 egg yolk
  • 1 ½ tsp vanilla extract

Additional

  • Red food coloring (add one drop at a time until desired pink color)

Instructions

  1. Preheat Oven and Prepare Baking Pan: Preheat your oven to 350 degrees Fahrenheit. Line a baking pan with parchment paper to prevent sticking and ensure easy cleanup.
  2. Cream Butter and Sugar: In the bowl of a stand mixer, add the cold butter and granulated sugar. Mix on high speed for 2 to 3 minutes, or until no clumps of butter remain and the mixture is creamy and well combined.
  3. Add Eggs and Vanilla: Add the egg, egg yolk, and vanilla extract to the butter-sugar mixture. Stir until fully incorporated and the mixture is smooth.
  4. Combine Dry Ingredients: Add the flour, baking powder, and sea salt into the wet mixture. Stir together gently until a dough forms and all ingredients are evenly mixed.
  5. Add Red Food Coloring: Add red food coloring one drop at a time to the dough. Continue stirring and adding drops until the dough reaches your preferred shade of pink.
  6. Shape Cookies: Using an ice cream scoop, portion out balls of cookie dough onto the prepared baking pan. Use your hands to slightly flatten each dough ball to encourage even baking.
  7. Bake Cookies: Bake in the preheated oven for 10 to 11 minutes or until the cookies are just set in the center and lightly golden around the edges.
  8. Cool Cookies: Remove the cookies from the oven and allow them to cool on the baking pan for 10 minutes. Then transfer to a wire rack to cool completely before serving or storing.

Notes

  • Using cold butter helps create a tender and slightly flaky cookie texture.
  • If you prefer a deeper pink color, add red food coloring slowly to avoid oversaturating the dough.
  • For gluten-free version, use a 1-to-1 gluten-free flour blend for best results.
  • Do not overbake; the cookies should be just set in the middle to maintain softness.
  • Store cookies in an airtight container at room temperature for up to 5 days.
