Ingredients

1 (3.4 oz) box instant vanilla pudding mix (or coconut cream instant pudding)

1 (20 oz) can crushed pineapple (do not drain)

1 (8 oz) tub Cool Whip (whipped topping), thawed

2 cups mini marshmallows

1 cup shredded sweetened coconut (optional)

½ cup chopped pecans (optional)

Instructions

  1. In a large mixing bowl, combine the instant pudding mix and the entire can of crushed pineapple (including juice). Stir until the pudding mix is fully dissolved.
  2. Gently fold in the Cool Whip, mini marshmallows, shredded coconut, and chopped pecans until well combined.
  3. Cover the bowl and refrigerate for at least 1 hour to allow the flavors to meld and the texture to set.
  4. Once chilled, give the mixture a gentle stir and serve in individual bowls or a large serving dish.
