This tropical pineapple coleslaw is a delightful combination of creamy, crunchy, and sweet flavors, offering a unique twist on the classic side dish.

Ingredients

Slaw

  • 16 ounces broccoli slaw
  • 3 cups angel hair coleslaw or thinly sliced cabbage
  • 20 ounces pineapple tidbits in natural juice (reserve ⅓ cup juice)

Dressing

  • 1 cup mayonnaise
  • 3 tablespoons apple cider vinegar
  • 2 tablespoons granulated sugar
  • 2 teaspoons fresh cracked black pepper
  • 1 teaspoon kosher salt

Instructions

  1. Add the slaw ingredients to a bowl: Combine broccoli slaw, angel hair coleslaw, and pineapple tidbits.
  2. Prepare the dressing: Mix reserved pineapple juice, mayonnaise, vinegar, sugar, pepper, and salt until smooth.
  3. Combine and chill: Pour dressing over slaw, mix well, and refrigerate for at least 4 hours.
  4. Serve: Enjoy with your favorite main dish.

Notes

  • If angel hair coleslaw is unavailable, thinly slice cabbage or use a prepackaged cabbage mix.
  • Double or triple the dressing for future use; store extra in the fridge.
  • To simplify mixing and storage, use a 2-gallon Ziploc bag for the coleslaw.
