Ingredients

Dry Ingredients

  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon good quality salt

Wet Ingredients

  • 1 cup unsalted butter (2 sticks, room temperature)
  • 1 cup sugar
  • 1 large egg
  • 1 teaspoon good quality vanilla extract

Instructions

  1. Mix Dry Ingredients: In a medium bowl, stir together the all-purpose flour, baking powder, and salt. Set this mixture aside for later use.
  2. Cream Butter and Sugar: Using an electric mixer fitted with the paddle attachment, cream the room temperature unsalted butter and sugar together until the texture is light and fluffy, about 2-3 minutes.
  3. Add Egg and Vanilla: Incorporate the egg and vanilla extract, beating the mixture for another minute until fully blended.
  4. Combine Dry and Wet Ingredients: Slowly add the flour mixture to the butter mixture carefully to avoid flour dust clouds. Continue to blend until all the flour is incorporated and the dough pulls away from the sides of the bowl, beginning to form a crumbly dough.
  5. Knead Dough: Remove about half the dough and knead by hand briefly to form a smooth ball. Roll the dough out onto a lightly floured surface or plastic wrap for easier handling.
  6. Cut Out Cookies: Use cookie cutters to shape the dough into desired cookie shapes. Place the cutouts on a baking sheet.
  7. Chill Cookies: Place the entire baking sheet with unbaked cookies into the freezer for 5 minutes to firm up before baking.
  8. Preheat Oven and Bake: Preheat your oven to 350°F (175°C). Bake cookies for 9-11 minutes depending on their size and thickness. The cookies are done when their tops lose shine but do not brown significantly.
  9. Cool Cookies: Let the cookies cool on the baking sheet for a minute to firm up, then carefully transfer them to a wire rack to cool completely before decorating or serving.

Notes

  • You can vary the vanilla flavor by using almond extract or lemon extract to customize your cookie taste.
  • For best results, ensure butter is soft but not melted before creaming with sugar.
  • Freezing the cookies before baking helps maintain their shape and prevents spreading.
  • These cookies are perfect for decorating with royal icing or sprinkles once cooled.
  • Storage: Keep in an airtight container at room temperature for up to 1 week or freeze for longer storage.
