Pasta with Creamy Spinach Sauce and Parmesan Recipe

A quick and creamy pasta dish featuring a vibrant spinach sauce made with garlic, cream cheese, and parmesan. Perfect for a simple yet flavorful weeknight meal.

Ingredients

Pasta

  • 8oz (225 grams) pasta (penne, rigatoni, spaghetti…)

Sauce

  • 1 Tbsp olive oil or extra virgin olive oil, plus more to serve
  • 23 garlic cloves, finely sliced or minced
  • 9oz (250 grams) baby spinach, washed
  • ¼ tsp fine salt, plus more to taste
  • 5oz (140 grams) cream cheese
  • 1oz (30 grams) freshly grated parmesan cheese, plus more to serve
  • ¼ tsp ground nutmeg, or of freshly grated nutmeg, or according to taste
  • black pepper, to taste

Instructions

  1. Cook Pasta: Cook your pasta until al dente following the package directions. Before draining, reserve at least 1/2 cup of pasta cooking water and set aside.
  2. Heat Olive Oil: Meanwhile, heat the olive oil in a large skillet over medium heat.
  3. Sauté Garlic: Add garlic and cook for about 1 or 2 minutes until fragrant, making sure it does not burn.
  4. Wilt Spinach: Add part of the spinach and season with salt. Stir until wilted, adding handfuls of spinach at a time.
  5. Make Sauce: When the spinach is wilted but still bright green, stir in cream cheese and 1/3 cup of the reserved pasta cooking water. Reserve the remaining water in case you need to loosen the sauce later.
  6. Add Cheese and Nutmeg: Stir in grated parmesan cheese and nutmeg to the sauce. Continue cooking for a couple of minutes until combined and sauce is creamy.
  7. Combine and Serve: Drain pasta and add it to the skillet. Toss everything together to combine. Serve immediately with a drizzle of extra virgin olive oil, black pepper, and additional freshly grated parmesan cheese. Enjoy.

Notes

  • Reserve pasta cooking water to adjust the sauce consistency as needed.
  • Do not burn the garlic to avoid bitterness.
  • Add spinach gradually to allow it to wilt evenly.
  • Use freshly grated nutmeg if possible for best flavor.
