Ingredients

Preparation

  • 1 serving cooking spray

Wet Ingredients

  • 1 ¼ cups milk
  • ¼ cup vinegar
  • ¼ cup oil
  • 1 egg

Dry Ingredients

  • 1 ¼ cups all-purpose flour
  • ¼ cup white sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ¼ teaspoon salt

Instructions

  1. Preheat Oven and Prepare Tins: Preheat your oven to 375 degrees F (190 degrees C). Spray two mini muffin tins thoroughly with cooking spray to prevent sticking.
  2. Make Buttermilk Mixture: In a bowl, combine milk and vinegar and let it stand for about 5 minutes until the milk curdles, creating a homemade buttermilk effect.
  3. Add Wet Ingredients: Beat the oil and egg into the curdled milk mixture until fully incorporated.
  4. Combine Dry Ingredients: In a separate bowl, mix together the all-purpose flour, sugar, baking powder, baking soda, and salt.
  5. Mix Batter: Stir the dry ingredients into the milk mixture until the batter is smooth and free of lumps, taking care not to overmix.
  6. Fill Muffin Tins: Using a tablespoon or small batter scoop, spoon the batter evenly into the prepared mini muffin tins.
  7. Bake: Bake the batter in the preheated oven for about 8 minutes, or until the pancake poppers have risen and appear pale but set. Oven times may vary slightly, so keep an eye on them.
  8. Remove and Serve: Remove the pancake poppers from the tins using a silicone scraper and serve warm, optionally with strawberry jam, syrup, or powdered sugar.

Notes

  • You can substitute buttermilk for the milk and vinegar mixture if preferred.
  • Baking times can vary slightly between ovens, so watch for the pancake poppers to be risen and pale rather than browned.
  • These poppers freeze well and can be reheated for quick breakfasts.
