These pancake donuts combine the best of both worlds—fluffy pancakes and the fun shape of donuts! A delicious twist on your traditional pancake recipe.

Ingredients

1 1/2 cups all-purpose flour

2 tablespoons sugar

1 tablespoon baking powder

1/2 teaspoon salt

3/4 cup milk

2 eggs

1 teaspoon vanilla extract

2 tablespoons melted butter

Instructions

  1. Preheat your donut pan or heat a non-stick skillet over medium heat.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In a separate bowl, whisk together the milk, eggs, vanilla extract, and melted butter.
  4. Gradually combine the wet and dry ingredients, stirring until just mixed.
  5. Spoon the batter into a donut pan or use a piping bag to fill the pan halfway. If using a skillet, drop spoonfuls of batter onto the skillet to form small circles.
  6. Bake in the donut pan at 350°F (175°C) for about 12-15 minutes or until a toothpick inserted comes out clean.
  7. Let the pancake donuts cool for a few minutes before serving. You can drizzle them with syrup, sprinkle with powdered sugar, or add toppings like fresh fruit or chocolate chips.
