Ingredients

Maple Candy

  • 1/3 cup maple syrup (grade A)

Pancakes

  • 1.25 cups pancake mix (I used Kodiak, enough to make about 8 pancakes)
  • 1.25 cups water for pancake mix
  • Cooking spray, butter, or oil for cooking

Sausage

  • 4 sausage patties (pre-formed or pre-made)

Eggs and Cheese

  • 5 large eggs
  • 1 tbsp water
  • Salt and pepper, to taste
  • 4 slices cheddar cheese (or equivalent shredded cheese)

Instructions

  1. Make the Maple Candy: Line a baking sheet with parchment paper. Heat the maple syrup in a small pan over medium heat, watching carefully as it bubbles and reduces over 4-6 minutes. Immediately pour the reduced syrup onto the parchment and spread thinly using a spatula. Let it cool for about 10 minutes, then break into small pieces.
  2. Prepare the Pancakes: In a small bowl, whisk together pancake mix and water until mostly smooth. Stir in the maple candy pieces if using. Heat a greased pan over medium heat and make small pancakes. Cook each side until golden brown: about 4 minutes on the first side, 2 minutes on the second. Keep warm in a low oven or covered with foil.
  3. Cook the Sausage Patties: Clean the pan used for pancakes, add butter or oil, and cook sausage patties for 3-4 minutes until they reach an internal temperature of 145°F. Keep warm.
  4. Cook the Eggs: Whisk eggs with water, salt, and pepper. Regrease the pan and heat over medium. Pour in egg mixture and cook on stovetop until set at the bottom and edges, about 2 minutes. Transfer to oven to finish cooking top, about 3-4 minutes, then fold like an omelet and cut into sections. Alternatively, cook a small omelet on the stove with cheese inside.
  5. Assemble the Sandwiches: Place a sausage patty on a pancake, add the folded egg with cheese, then top with another pancake. Repeat for all four sandwiches.

  • Watch the maple syrup carefully while reducing to avoid burning.
  • Use a thermometer to ensure sausage is safely cooked to 145°F.
  • Keeping pancakes and cooked ingredients warm in a low oven prevents them from cooling while you finish preparing other components.
