This moist and flavorful Orange, Pistachio & Almond Cake is a grain-free delight packed with vibrant citrus and nutty goodness. Using whole simmered oranges blended into a puree, combined with ground pistachios and almond flour, this cake offers a unique texture and rich taste.   • 2 oranges
  • 3 eggs
  • 2/3 cup honey
  • 1 cup ground pistachios
  • 2 cups almond flour
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda

Topping

  • 1 orange (for dried slices, optional)
  • 1/2 cup orange juice
  • 2 tbsp honey

Instructions

  1. Simmer the Oranges: Rinse the oranges thoroughly and place them whole in a pot. Cover with water and simmer on low heat for 1 hour until soft.
  2. Prepare Orange Puree: Drain the oranges and transfer them to a blender. Blend for about 1 minute until you achieve a smooth puree consistency.
  3. Grind Pistachios: Place pistachios in a coffee grinder or food processor and grind until finely powdered with no large chunks remaining.
  4. Preheat Oven and Prepare Pan: Preheat your oven to 175°C (350°F). Grease a loose-bottom cake pan to prevent sticking.
  5. Combine Ingredients: In a large bowl, mix the orange puree, eggs, honey, ground pistachios, almond flour, vanilla extract, and baking soda until fully incorporated. Pour the batter into the greased cake pan.
  6. Bake the Cake: Bake for 1 hour, covering with tin foil if the top browns too quickly. The cake is done when a skewer inserted comes out clean.
  7. Prepare Orange-Honey Glaze: While baking, combine 1/2 cup orange juice and 2 tbsp honey in a small pot. Bring to a boil, then simmer until the liquid reduces by half. Remove from heat and set aside.
  8. Glaze and Finish: Once the cake is out of the oven, brush the orange-honey glaze evenly over the cake surface. Top with dried orange slices if desired. Run a knife around the edges before unclasping the cake pan ring.

Notes

  • If making dried orange slices at home, wash an orange and thinly slice it (no thicker than 0.5 cm). Place slices on parchment-lined baking sheet and bake at 150°C for 1 hour, flipping halfway to prevent burning.
