A creamy, flavorful one-pan garlic Parmesan pasta that combines tender linguine noodles with savory garlic, butter, and Parmesan cheese for an easy and comforting meal ready in just 25 minutes.

Ingredients

Main Ingredients

  • 1 tablespoon olive oil
  • 2 tablespoons minced garlic (about 34 cloves)
  • 2 tablespoons butter
  • 8 ounces uncooked linguine noodles
  • 2 cups low-sodium chicken broth
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup warmed milk/cream (half nonfat milk, half heavy cream)
  • 1/2 cup fresh shredded Parmesan cheese (off the block)
  • 1 tablespoon fresh minced parsley, for garnish

Instructions

  1. Heat and sauté garlic: In a 12-inch skillet over medium-high heat, add olive oil and minced garlic. Stir constantly and cook until the garlic becomes fragrant and starts to brown slightly, about 1 minute, being careful not to burn.
  2. Add pasta and liquids: Add the uncooked linguine noodles, salt, pepper, butter, chicken broth, and warmed milk/cream to the skillet. Stir everything together and bring the mixture to a boil over medium-high heat.
  3. Simmer pasta: Reduce the heat to medium-low, cover the skillet, and let the pasta simmer for 20 minutes or until the noodles are tender and have absorbed most of the liquid. For a faster method, cook uncovered and stir constantly for about 10 minutes until the pasta is tender.
  4. Finish with cheese: Remove the skillet from heat and toss the pasta gently. Gradually stir in the freshly grated Parmesan cheese, ideally using a microplane to add it directly over the pasta for best flavor.
  5. Garnish and serve: Garnish the pasta with fresh minced parsley if desired, and serve immediately while warm.

Notes

  • Using freshly grated Parmesan cheese from the block ensures a richer flavor and better melting consistency compared to pre-shredded cheese.
  • If you prefer a lighter dish, substitute the heavy cream with all nonfat milk, adjusting the quantity for creaminess.
  • For a vegetarian option, replace chicken broth with vegetable broth.
  • Keep an eye on the pasta as it cooks to prevent overcooking or burning on the bottom of the skillet.
  • This recipe can be doubled if using a larger skillet and increased liquid accordingly.
