A comforting and flavorful one-pan caramelized onion pasta casserole that combines the sweet depth of caramelized onions with a creamy vegan sauce, all baked to perfection. This easy and delicious dish is perfect for a cozy family dinner or entertaining guests.

Ingredients

Main Ingredients:

  • 5 small yellow onions, sliced, or 3 large
  • 1 head garlic, top sliced off
  • ½ cup sun-dried tomatoes, chopped
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tbsp paprika
  • 1 tsp dried parsley
  • ½ cup coconut milk
  • 3 cups farfalle pasta, cooked

Garnish:

  • 1 handful fresh parsley, chopped
  • 1 handful fresh basil, chopped
  • 1 lemon, juiced

Instructions

  1. Preheat the oven: Preheat the oven to 400F.
  2. Prepare the casserole: In a casserole dish, combine onions, sun-dried tomatoes, paprika, salt, pepper, and dried parsley. Place the garlic head in the middle, drizzle with olive oil, cover with foil, and bake for 1 hour.
  3. Cook the pasta: Cook pasta according to package directions, reserving some pasta water.
  4. Combine: Remove garlic, squeeze out cloves, add herbs, lemon juice, coconut milk, cooked pasta, and pasta water. Stir well.
