Ingredients

Soup Base

  • 4 tablespoons butter
  • 1 small yellow onion, diced
  • 1 cup sliced celery
  • 1 cup matchstick carrots
  • 6 cloves garlic, minced
  • 2 teaspoons Italian seasoning
  • 1/2 teaspoon rubbed sage
  • 1/4 cup all-purpose flour

Liquids

  • 4 cups chicken broth
  • 1 1/2 cups heavy cream

Main Ingredients

  • 1 pound potato gnocchi
  • 2 cups shredded rotisserie chicken
  • 1 1/2 cups chopped fresh spinach

Seasoning & Finishing

  • 1 teaspoon balsamic vinegar
  • Kosher salt, to taste
  • Fresh cracked pepper, to taste

Instructions

  1. Heat butter. Melt 4 tablespoons butter in a large pot over medium heat to prepare the base for sautéing the vegetables.
  2. Sauté vegetables. Add diced onion, sliced celery, and matchstick carrots along with salt and pepper. Cook while stirring occasionally for about 8 minutes until the vegetables soften.
  3. Add garlic and herbs. Stir in minced garlic, Italian seasoning, rubbed sage, salt, and pepper. Cook for another minute to release the aromas.
  4. Add flour. Sprinkle in the flour and cook for another minute while stirring frequently to form a roux that will thicken the soup.
  5. Deglaze the pan. Slowly stir in 1/4 to 1/2 cup chicken broth, scraping the bottom of the pot to loosen any browned bits for enhanced flavor.
  6. Add liquids. Pour in the remaining chicken broth and heavy cream, adding a few pinches of salt and pepper. Stir to combine.
  7. Simmer and add gnocchi and chicken. Bring the soup to a simmer over medium-high heat, then add potato gnocchi and shredded rotisserie chicken.
  8. Cook the gnocchi. Reduce heat to medium-low and gently simmer for 3-5 minutes until the gnocchi are cooked through and tender.
  9. Incorporate spinach and vinegar. Stir in fresh chopped spinach and balsamic vinegar until the spinach wilts, integrating fresh flavors.
  10. Season and serve. Adjust seasoning with salt and pepper to taste, then enjoy your homemade comforting soup!

Notes

  • Use rotisserie chicken for convenience and added flavor, but cooked chicken breast works as well.
  • If you prefer a thicker soup, increase the flour slightly or simmer for a few extra minutes.
  • For a lighter version, substitute heavy cream with half-and-half or whole milk, noting it will be less creamy.
  • Fresh spinach adds a burst of color and nutrients; kale can be used as a substitute.
  • Make sure not to overcook the gnocchi to prevent them from becoming mushy.
  • The balsamic vinegar at the end adds a subtle tang that brightens the rich soup.
