Delicious no-bake protein bars made with natural peanut butter, vanilla protein powder, almond flour, and a chocolate coconut oil topping. These bars are easy to prepare, packed with protein, and perfect for a healthy snack or post-workout energy boost.

Ingredients

Protein Bar Base

  • 1 1/2 cup natural peanut butter
  • 1/2 cup vanilla protein powder
  • 1/2 cup almond flour
  • 1/4 cup maple syrup
  • 1/3 cup chocolate chips

Chocolate Topping

  • 1/2 cup melted chocolate
  • 2 tbsp coconut oil

Instructions

  1. Mix Base Ingredients: In a large bowl, combine the natural peanut butter, vanilla protein powder, almond flour, and maple syrup. Stir well to form a thick, cookie dough-like consistency which will serve as the protein bar base.
  2. Add Chocolate Chips: Gently fold the chocolate chips into the protein dough mixture to evenly distribute them throughout the base.
  3. Prepare Baking Dish: Line a 5 x 7 inch baking dish with parchment paper to prevent sticking and facilitate easy removal of the bars.
  4. Press Mixture Into Dish: Transfer the protein dough into the prepared baking dish. Use your fingers or a spatula to tightly pack the mixture, pressing it down to create an even, flat layer.
  5. Make Chocolate Topping: Melt the chocolate until smooth and combine it with the coconut oil. Mix well to create a glossy chocolate coating.
  6. Pour Topping and Chill: Pour the melted chocolate and coconut oil mixture evenly over the packed protein base. Refrigerate the dish until the chocolate hardens, about 30 minutes.
  7. Slice and Serve: Once the chocolate topping is firm, remove the bars from the dish using the parchment paper. Sprinkle with flaky salt if desired, slice into 12 portions, and enjoy your protein-packed snack.
