Ingredients

Crust

  • 11 ounces frosted animal cookies (about bags), plus more for topping
  • ½ cup (1 stick) unsalted butter, melted
  • 1 tablespoon granulated sugar

Filling

  • 16 ounces (2 bricks) cream cheese, room temperature
  • 1 cup powdered sugar
  • 1 teaspoon pure vanilla extract
  • 1 cup pink candy melts
  • Pink food coloring (optional)
  • Rainbow sprinkles (optional, for topping)

Instructions

  1. Prepare the Pan: Line an 8×8-inch baking pan with parchment paper, ensuring the ends overlap the pan by about an inch on the sides. This will make lifting out the cheesecake easier once it’s set.
  2. Crush the Cookies: Using a food processor or placing the cookies in a large Ziplock bag, crush the frosted animal cookies into a fine powder.
  3. Make the Crust: Mix the crushed cookies with the melted butter and granulated sugar until the mixture resembles dough.
  4. Form the Crust: Press the cookie mixture firmly into the bottom of the prepared pan, spreading it evenly and pressing into every corner. Place the crust in the refrigerator to chill while you prepare the filling.
  5. Beat the Filling Base: In the bowl of a stand mixer fitted with the paddle attachment, beat together the room temperature cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  6. Melt the Candy: Melt the pink candy melts in a small microwave-safe bowl, heating in short intervals and stirring until completely smooth.
  7. Combine Filling: With the mixer running on low speed, slowly pour the melted candy melts into the cream cheese mixture. Add pink food coloring if a deeper pink color is desired. Mix until well combined.
  8. Assemble the Cheesecake: Pour the filling evenly over the chilled cookie crust, spreading it to cover the entire surface.
  9. Chill to Set: Refrigerate the cheesecake for about 2 to 3 hours until it is firm and set.
  10. Add Toppings and Serve: Once set, decorate the cheesecake with rainbow sprinkles and additional frosted animal cookies if desired. Cut into squares and serve chilled.
