No-Bake Eclair Cake is a delightful dessert with layers of graham crackers, vanilla pudding, whipped topping, and chocolate frosting. It’s a simple yet impressive treat that requires no baking!

Ingredients

For the Pudding Layers:

  • 2 (3.4 ounce) packages instant vanilla pudding mix
  • 3 cups milk
  • 8-ounce tub whipped topping, thawed (Cool Whip)

For the Cake Layers:

  • 2 sleeves graham cracker squares

For the Topping:

  • 16-ounce container chocolate frosting

Instructions

  1. In a medium bowl, mix together the instant vanilla pudding mix, milk, and whipped topping until smooth.
  2. In a 9×13-inch baking dish, arrange a layer of graham cracker squares on the bottom.
  3. Spread half of the pudding mixture over the crackers.
  4. Add another layer of graham crackers, then top with the remaining pudding mixture.
  5. Finish with a final layer of graham crackers.
  6. Cover with plastic wrap and refrigerate for 30 minutes to allow the pudding to set.
  7. Soften the chocolate frosting in the microwave, then spread it over the top layer of graham crackers.
  8. Refrigerate overnight before slicing and serving.

Notes

  • This cake gets better with time as the graham crackers soften.
