These classic No Bake Cookies are a quick and tasty chocolate peanut butter treat that requires no flour or eggs. With just a few staple ingredients, these easy peanut butter no bake cookies are ready to enjoy in just 30 minutes!

Ingredients

For the cookies:

  • 1/2 cup unsalted butter
  • 1/3 cup cocoa powder
  • 1/2 cup milk
  • 1 1/2 cups granulated sugar
  • 1/3 cup brown sugar (light or dark)
  • 3 cups quick oats
  • 2/3 cup creamy peanut butter
  • 2 tsp vanilla extract
  • 1/2 tsp salt

Instructions

  1. Prepare the cookies: Line two large baking sheets with parchment paper or silicone baking mats. Set aside.
  2. Cook the mixture: In a 3-quart saucepan, combine granulated sugar, brown sugar, butter, milk, and cocoa powder. Bring to a boil over medium heat, stirring occasionally.
  3. Boil the mixture: Boil for exactly one minute once the mixture is boiling.
  4. Add ingredients: Remove from heat and stir in 2 cups of quick oats until coated. Add peanut butter, vanilla extract, salt, and remaining oats. Stir until combined.
  5. Scoop and set: Scoop out the mixture onto prepared baking sheets. Let sit at room temperature for 20-30 minutes until set and firm to the touch.
  6. Storage: Store cookies in an airtight container at room temperature for up to 1 week, or refrigerate.
