Ingredients

Rice

  • 3 cups mushrooms, sliced thinly
  • 1 small red onion, chopped
  • 2 cloves garlic, minced
  • 1/4 cup parsley, roughly chopped

  • 2 tablespoons olive oil (or butter)
  • 3 tablespoons teriyaki sauce

Instructions

  1. Prepare the Rice: Cook the wild rice blend according to the package instructions, typically by boiling it in water until tender, then drain and set aside.
  2. Sauté Vegetables: Heat the olive oil or butter in a pan over medium-high heat. Add the chopped celery, sliced mushrooms, and chopped red onion. Cook, stirring occasionally, until the onions soften and the vegetables start to brown, about 3 to 4 minutes.
  3. Add Garlic: Stir in the minced garlic and continue cooking for another 3 minutes until fragrant and softened.
  4. Add Teriyaki Sauce: Pour in the teriyaki sauce, stirring well to coat the vegetables evenly. Simmer the mixture for 1-2 minutes to allow the sauce to reduce slightly and meld with the vegetables.
  5. Combine Rice and Vegetables: Add the cooked wild rice to the pan with the sautéed vegetables and teriyaki sauce. Stir gently to combine all ingredients thoroughly and heat through for 1-2 minutes.
  6. Finish with Parsley: Remove from heat and stir in the roughly chopped parsley for a fresh, bright flavor. Serve warm.
