A quick and delicious Mushroom Avocado Toast recipe that combines sautéed garlic mushrooms with creamy avocado on toasted bread, perfect for a nutritious breakfast or light meal.

Ingredients

Mushroom Mixture

  • 2 cups mushrooms, sliced (any variety)
  • 23 tsp extra virgin olive oil
  • 24 cloves garlic, roughly chopped
  • 1 Tbsp balsamic or apple cider vinegar
  • Salt and pepper to taste

Toast

  • 2 slices bread, toasted
  • 1 avocado
  • Fresh lemon juice (from 1 lemon)

Instructions

  1. Heat the skillet: Warm a skillet over high heat and add the extra virgin olive oil. When the oil is hot, add the chopped garlic and cook for about one minute to infuse the oil and soften the garlic.
  2. Add mushrooms: Pour the sliced mushrooms into the skillet. Toss them in the oil using a spatula to coat evenly.
  3. Cook covered: Cover the skillet with a lid and cook the mushrooms for 1-3 minutes until they become tender and lightly browned.
  4. Finish cooking: Reduce heat to low, remove the lid, add salt and pepper, and toss the mushrooms. Turn off the heat and stir in the balsamic or apple cider vinegar. Then increase heat back to high and cook until any excess liquid evaporates, leaving the mushrooms lightly browned and reduced in size. Turn off heat and let them sit in the pan while you prep the toast.
  5. Prepare avocado toast: Toast the bread slices. Meanwhile, mash the avocado and spread it evenly onto the toasted bread. Squeeze fresh lemon juice over the avocado for brightness.
  6. Assemble and serve: Top the avocado toast with the warm sautéed mushrooms. Slice if desired and serve immediately.
