Ingredients

Baking Soda Bath

  • 1/4 cup baking soda

Instructions

  1. Making the Dough: In a large mixing bowl, combine warm water, sugar, and yeast. Let it sit for 5 minutes until it becomes frothy.
  2. Kneading the Dough: Add flour and salt to the yeast mixture, kneading until a smooth and elastic dough forms.
  3. Resting the Dough: Cover the bowl with a clean cloth and let the dough rest for 30-45 minutes, allowing it to double in size.
  4. Preparing the Filling: Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper. Combine mozzarella cubes, chopped rosemary, and grated Parmesan cheese in a bowl.
  5. Shaping the Pretzels: Divide the risen dough into 8 portions, roll each into a rope, flatten slightly, add the filling, fold over, and seal to form pretzels.
  6. Boiling the Pretzels: In a saucepan, bring water almost to a boil, add baking soda, then dip each pretzel in the bath briefly before placing on the baking sheet.
