Ingredients

Meatballs

  • .5 lb Lean ground beef
  • 1 tbsps Italian Seasoning
  • 1 egg
  • 1 tbsp fresh parsley finely chopped
  • 1 tsp salt
  • 0.5 tsp ground black pepper
  • 12 oz mozzarella cheese cut into small cubes

Sauce

  • 1 tbsp olive oil
  • 1/2 small onion finely chopped
  • 14 oz crushed tomatoes, canned
  • 1 bay leaf
  • 1 clove garlic chopped
  • 1 tbsp fresh parsley, or basil finely chopped
  • 1 tsp black pepper

Instructions

  1. Make the Marinara Sauce – Add olive oil to a pan over medium heat. Saute onion for five minutes. Add garlic, crushed tomatoes, bay leaf, black pepper, and parsley. Simmer for 20-30 minutes.
  2. Make the Meatballs – Preheat oven to 400F. Line a sheet pan with parchment paper. Mix meat, egg, and seasonings. Form meatballs around mozzarella. Bake for 15-20 minutes.
  3. Serve – Serve meatballs with marinara sauce, sprinkle with parsley or basil.

Notes

  • Net Carbs – Most of the carbs come from the crushed tomatoes, so adjust sauce amount for lower carb count.
