These no-bake monster cookie oatmeal energy balls are a quick and easy snack option that tastes just like a classic monster cookie. Packed with peanut butter, oats, and sweet morsels, they are a delightful energy boost for any time of the day.

Ingredients

For the Energy Balls:

  • 1 cup creamy no-stir peanut butter
  • 1/2 cup honey
  • 1/3 cup vanilla protein powder
  • 2 1/4 cups old-fashioned rolled oats
  • 1/4 cup mini chocolate chips
  • 1/2 cup mini M&M’s

Instructions

  1. Add all of the ingredients to a large mixing bowl. Use a rubber spatula to mix it all together until a thick batter forms.
  2. Line a cookie sheet with wax paper. Use a mini cookie scoop or drop balls by spoonfuls onto the wax paper.
  3. Roll each one in your hands to smooth out the edges.
  4. Place the energy balls in the fridge for around an hour, or until firm.
  5. Store energy bites in an airtight container in the refrigerator or freezer (see notes).

Notes

  • Leftover energy bites can be stored in an airtight container or bag in the fridge or freezer. They will keep 5-7 days in the refrigerator, or 2-3 months in the freezer. To thaw, simply let the energy bite sit at room temperature for around 5 minutes before eating.
