Ingredients
Dry Ingredients:
- 1½ cups all‑purpose flour (190 g)
- 1 tsp baking soda
- ½ tsp baking powder
- ¼ tsp salt
- 1 tsp cinnamon
- ½ tsp nutmeg
Wet Ingredients:
- 1 cup chopped dates (150 g)
- ¾ cup boiling water + ½ tsp soda
- ½ cup unsalted butter (115 g)
- ¾ cup brown sugar
- 2 large eggs
- 1 cup chopped walnuts
Instructions
- Preheat oven to 350°F and prepare loaf pan. Soak dates in boiling water + baking soda for 15 min.
- Whisk dry ingredients together.
- Cream butter and sugar, then add eggs and date mixture.
- Fold in dry mix and walnuts; do not overmix.
- Pour into pan, top with walnuts, bake 45–55 min.
- Cool in pan 10 min, then lift out and cool completely.
