Ingredients

Chicken Casserole Base

  • 1 (10.5 ounce) can cream of chicken soup
  • ½ cup cottage cheese
  • ½ cup sour cream
  • 4 ounces cream cheese, at room temperature
  • 1 ½ teaspoons Creole seasoning
  • ½ teaspoon onion powder
  • 1 teaspoon garlic powder, divided
  • 5 cups shredded rotisserie chicken
  • 1 tablespoon chopped fresh parsley

Topping

  • 30 buttery round crackers (such as Ritz), crushed
  • 4 tablespoons unsalted butter, melted
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon sliced scallions, or to taste

Instructions

  1. Preheat oven: Preheat the oven to 350°F (175°C) to prepare for baking the casserole.
  2. Mix creamy base: In a medium bowl, stir together the cream of chicken soup, cottage cheese, sour cream, cream cheese, Creole seasoning, onion powder, and ½ teaspoon garlic powder until the mixture is smooth and well blended.
  3. Add chicken and parsley: Fold in the shredded rotisserie chicken and chopped parsley until evenly coated with the creamy mixture.
  4. Prepare cracker topping: In a separate bowl, combine the crushed buttery crackers, melted butter, and the remaining ½ teaspoon garlic powder, mixing well to coat the crackers evenly.
  5. Assemble casserole: Spoon the chicken mixture evenly into a 9-inch square or 11×7-inch baking dish. Sprinkle the shredded mozzarella cheese evenly over the top, then spread the cracker mixture evenly as the final layer.
