Instructions

  1. Prepare the tomato sauce: Cut the tomatoes in half and combine with the onion and garlic in a blender. Add 1 cup of chicken stock and blend until smooth and pureed.
  2. Heat the oil: Preheat the canola oil in a large saucepan over medium heat to get it ready for toasting the pasta.
  3. Toast the pasta: Add the fideo pasta to the hot oil and stir constantly, ensuring the pasta is evenly coated. Continue cooking until the pasta turns a nice golden brown, which develops its nutty flavor.
  4. Add the tomato sauce: Pour the blended tomato mixture into the saucepan with the toasted pasta. Let it sizzle while stirring for about 30 seconds to combine flavors.
  5. Simmer the soup: Pour in the remaining chicken stock, season with salt to taste, and bring the soup to a boil. Once boiling, reduce the heat to low and let it simmer for about 10 minutes, or until the pasta is tender and fully cooked.
