Menemen with Beyaz Peynir or Feta is a flavorful Turkish scrambled eggs dish made with sautéed onions, garlic, peppers, and tomatoes, seasoned with chili flakes and spices, then topped with crumbled feta cheese. This hearty, savory breakfast or brunch recipe combines fresh vegetables and spices to create a comforting, protein-rich meal traditionally enjoyed across Turkey.

Ingredients

Vegetables and Aromatics

  • 3 tbsp Olive Oil (or Vegetable Oil)
  • 1 large Red Onion, diced
  • 1 clove Garlic, sliced
  • ½ Red Bell Pepper, diced (or Roma)
  • 3 Sivri Peppers, cut into rounds (or 6 Padron Peppers or ½ Green Pepper)
  • 3 large Tomatoes, diced or pureed

Spices and Seasonings

  • ¾ tsp Red Chilli Flakes
  • 1 tsp Aleppo Chilli Flakes
  • Salt and Black Pepper, to taste
  • 1 tsp Smoked Paprika (optional)
  • 1 tsp Ground Cumin (optional)

Eggs and Cheese

  • 4 large Eggs
  • 25 g Feta Cheese, crumbled (or Beyaz Peynir)

Instructions

  1. Prepare the base: Heat the olive oil gently in a frying pan over medium heat. Add the diced onions and sliced garlic, and cook for 3 to 4 minutes until softened and fragrant.
  2. Add peppers: Add the diced red bell pepper and sliced sivri peppers to the pan, then sauté for another 3 to 4 minutes until they soften and release their aroma.
  3. Season and simmer: Stir in the red chilli flakes, Aleppo chilli flakes, salt, and black pepper. If using, add smoked paprika and ground cumin now. Cook for 1 minute before stirring in the diced or pureed tomatoes. Bring the mixture to a gentle simmer.
  4. Cook tomato mixture: Cover the pan and cook on medium-low heat for 10 minutes, allowing the tomato mixture to thicken and the flavors to meld.
  5. Add and scramble eggs: Create small spaces in the tomato mixture and crack in the eggs. Allow the egg whites to set slightly, then gently scramble them into the tomato and pepper mixture.
  6. Finish with cheese: Sprinkle the crumbled feta cheese over the eggs and cook for a few additional minutes until the eggs are fully cooked but still moist. Remove from heat and adjust seasoning if needed before serving.

Notes

  • You can substitute the peppers based on availability, using green bell peppers or Padron peppers as alternatives.
  • For a milder version, reduce or omit the chilli flakes.
  • The optional spices (smoked paprika and cumin) enhance depth but can be omitted for a simpler flavor.
  • Serve hot with crusty bread or traditional Turkish flatbread for an authentic experience.
  • Menemen is best enjoyed fresh but can be reheated gently on the stovetop.
