This Melt-In-Your-Mouth Chicken Breast recipe features tender, juicy chicken breasts coated with a creamy mixture of mayonnaise (or Greek yogurt), Parmesan cheese, and seasonings, baked to a golden-brown savory crust that practically melts in your mouth.

Ingredients

4 boneless, skinless chicken breasts (about 1.52 pounds)

½ cup mayonnaise (or Greek yogurt for a lighter option)

½ cup grated Parmesan cheese (freshly grated is best)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon Italian seasoning

1 teaspoon paprika

Salt and pepper to taste

Optional: Fresh parsley or chives for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Place the chicken breasts between two pieces of plastic wrap or parchment paper and pound them to an even thickness using a meat mallet.
  3. Season the chicken breasts with salt and pepper on both sides and place them in a greased or parchment-lined baking dish.
  4. In a small bowl, combine the mayonnaise, grated Parmesan cheese, garlic powder, onion powder, Italian seasoning, and paprika. Stir until smooth and well combined.
  5. Spread the mayonnaise-Parmesan mixture evenly over the top of each chicken breast, making sure they are fully coated.
  6. Bake the chicken for 25-30 minutes, or until the internal temperature reaches 165°F (75°C) and the coating is golden brown and bubbly.
  7. For a crispy top, broil for the last 2-3 minutes, watching carefully to prevent burning.
  8. Remove from oven and let the chicken rest for 5 minutes to lock in the juices.
  9. Garnish with freshly chopped parsley or chives and serve hot with your favorite sides.

Notes

  • Swap mayonnaise for Greek yogurt for a lighter, lower-fat version.
  • Try different cheeses like mozzarella, cheddar, or Asiago for varied flavors.
  • Add a pinch of cayenne pepper or red pepper flakes for heat.
  • Fresh herbs like rosemary, thyme, or basil can be added to the creamy mixture for extra aroma.
  • Chicken thighs can be used instead of breasts but may require longer cooking time.
  • Store leftovers in an airtight container in the refrigerator up to 3 days or freeze up to 3 months.
  • Reheat leftovers in the oven at 350°F (175°C) for 10-15 minutes.
  • This recipe is naturally gluten-free.
