These zucchini boats are filled with a savory mixture of Greek feta, cherry tomatoes, kalamata olives, and aromatic herbs, creating a taste of the Mediterranean in every bite.

Ingredients

Zucchini Boats:

  • 4 medium zucchini (about 810 inches long)

Filling:

  • 1 cup crumbled feta cheese (use Greek feta for the most authentic flavor)
  • 1 cup cherry tomatoes, quartered
  • 1/2 cup kalamata olives, pitted and chopped
  • 1 small red onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground cumin (optional, for a slightly smoky flavor)
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh basil, chopped
  • 1 lemon, zested and juiced
  • Salt and pepper to taste
  • 1/4 cup breadcrumbs (optional, for extra crunch)
  • Extra virgin olive oil for drizzling

Instructions

  1. Preheat the Oven: Preheat the oven to 375°F (190°C). Wash the zucchini, slice in half, and scoop out the flesh.
  2. Prepare the Filling: Sauté onion and garlic, then add chopped zucchini flesh, tomatoes, olives, and seasonings. Stir in feta and herbs.
  3. Fill the Zucchini: Fill each zucchini half generously with the Mediterranean mixture. Top with breadcrumbs for crunch.
  4. Bake: Bake stuffed zucchini for 25–30 minutes until tender and golden brown.
  5. Finish: Squeeze lemon juice over the zucchini boats before serving.

  • Add Grains: Mix in quinoa, bulgur, or couscous for a heartier dish with extra fiber and protein.
  • Nutritional Boost: Wilt spinach or kale into the filling for added vitamins and minerals.
  • Try Different Cheeses: Experiment with goat cheese or ricotta for varied textures and flavors.
