Ingredients

Phyllo Shells

  • 15 Phyllo Shells

Filling

  • 1/4 cup crumbled feta cheese
  • 1/4 cup tomato, finely diced
  • 1/4 cup cucumber, finely chopped
  • 1 green onion, diced

Seasoning

  • 1 tbsp olive oil
  • 1 tsp lemon juice
  • 1/8 tsp dried basil
  • 1/8 tsp garlic powder
  • 1/8 tsp salt
  • 1/8 tsp black pepper
  • 1/8 tsp dried dill

Instructions

  1. Prepare the Vegetables: Chop the tomato, cucumber, and green onion finely. Optionally, peel the cucumber before chopping for a smoother texture.
  2. Combine the Base Ingredients: In a small bowl, add the crumbled feta cheese, diced tomato, cucumber, and green onion, mixing gently to combine.
  3. Mix the Dressing: In a separate small bowl, stir together olive oil, lemon juice, dried basil, garlic powder, salt, black pepper, and dried dill until well blended.
  4. Toss the Filling: Pour the dressing over the feta and vegetable mixture and toss carefully to ensure everything is evenly coated with the seasoning blend.
  5. Fill the Phyllo Shells: Evenly distribute the prepared feta and vegetable mixture into each of the 15 phyllo shells, making sure each bite is generously filled and ready to serve.

Notes

  • Peeling the cucumber is optional but recommended for a less bitter taste.
  • Phyllo shells can be found in the frozen or refrigerated section of most grocery stores.
  • This recipe is best served fresh to maintain the crispness of the shells.
  • For added flavor, garnish with fresh herbs like parsley or mint if desired.
  • Can be prepared in advance but fill the phyllo shells just before serving to avoid sogginess.
